How to make leche flan

Leche Flan is a really cool recipe for a custard-y type food. It's sweet and loaded with sugar, fat and all the things that make your nutritionist shake their head and fist when you come back from a long weekend. ;)
Here are the ingredients to make this yummy dish:
First, the topping is carmelized sugar, so collect up the following-
- 1 1/2 cups sugar
- 1 cup water
For the flan itself you'll need-
- 10 egg yolks
- 1 can sweetened condensed milk
- 1 can evaporated milk
- 1/2 tsp lemon extract
- 1/2 tsp vanilla extract
Other stuff you'll use when making flan-
- a knife (to separate the flan from the mould when serving)
- a saucepan (for caramelizing the sugar)
- spoon (to scoop the flan mix into the moulds)
- blender (mixing the ingredients)
- oven
- patience in the face of all that sugar

And now, to the cooking part.
The first thing you'll need to do is set your oven to pre-heat at 375 degrees, then carmelize your sugar in a saucepan. From there you'll pour this caramel goodness into the bottom of aluminum molds of your preferred shape.Now mix together your evaporated milk, condensed milk, egg yolks and extracts into a blender and blend until smooth and lightly frothy on top.Fill the moulds you've prepared with caramel to about 1 1/4 inches thick, then cover the moulds with aluminum foil.Bake for 40 minutes in a large baking pan which has a good layer of hot water in it.Let the now cooked flan cool in the moulds before refridgerating.Serve cold! When serving, position your plate over the open mould and quickly flip the two over, so the flan is on top and now upside down over the plate. This will bring the caramel side to the top, which is very nice for presentation. Feel free to drizzle with caramel sauce as well for an extra kick.Other flan items of interest

You guys are right, this recipe rocks. I've tried it in the past, though I skipped a step and went straight for caramel syrup instead of caramelizing my own sugar. ;)

It sounds like the wonderful desert which is common in South America and Mexico - yum!
